One Pot Vegetarian Minestrone Soup
This hearty minestrone soup recipe is super easy to make and packed with protein!

- 2 tbsp olive oil
- 1/4 tsp dried fennel
- 1/2 white onion, diced or one whole small onion
- 2 cloves garlic
- 1/2 tsp black ground pepper
- 3 medium yellow potatoes, diced
- 1 can diced tomatoes 28 oz
- 1 can white kidney beans, drained and rinsed
- 900 ml vegetable broth
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 cup pearl barley
- 1/2 tsp red pepper flakes
- 1 tsp dried parsley or 1/4 cup chopped fresh parsley
Saute the dried fennel and onion on medium heat until transparent.
Add the garlic and potatoes and saute until the garlic is fragrant.
Add the remaining ingredients and bring to a boil. Reduce the heat and simmer for 30 minutes.
Serve and enjoy with bread or biscuits!
