Matcha and Coconut Energy Bites

Ingredients
  

  • 1 cup large flake oats, ground into a fine oat flour
  • 1 1/2 tbsp matcha powder
  • 2 tsp vanilla extract
  • 4 tbsp smooth cashew butter
  • 1/4 cup shredded coconut (sweetened or unsweetened)
  • 3 tbsp honey (melted, if necessary)

Instructions
 

  • in a food processor or blender blend oats until smooth.
  • In a stand mixer, combine the oat flour, matcha powder, vanilla extract, cashew butter, and honey. Mix until smooth.
  • Add in the shredded coconut and mix until well combined.
  • Form into 1 tbsp sized balls and roll until smooth.
  • Store in an airtight container in the fridge or up to five days.
