Matcha and Coconut Energy Bites

- 1 cup large flake oats, ground into a fine oat flour
- 1 1/2 tbsp matcha powder
- 2 tsp vanilla extract
- 4 tbsp smooth cashew butter
- 1/4 cup shredded coconut (sweetened or unsweetened)
- 3 tbsp honey (melted, if necessary)
in a food processor or blender blend oats until smooth.
In a stand mixer, combine the oat flour, matcha powder, vanilla extract, cashew butter, and honey. Mix until smooth.
Add in the shredded coconut and mix until well combined.
Form into 1 tbsp sized balls and roll until smooth.
Store in an airtight container in the fridge or up to five days.
