Cucumber Quinoa Salad with Mint & Feta

- 1 cup Quinoa dry
- 1 cup Cucumber chopped
- 1 cup Green Peas fresh or frozen, defrosted
- 3/4 cup Feta crumbled
- 6-8 Mint Leaves Large
- 1/4 cup Olive Oil
- 1/4 cup White Wine Vinegar
- 1 Lemon juiced
- Salt & Pepper To Taste
Cook 1 cup dry quinoa according to the package directions and let cool slightly.
In a large mixing bowl, combine the cooked quinoa, green peas, cucumber, feta, and mint.
Whisk together the olive oil, white wine vinegar, lemon juice, and salt & pepper before pouring over the salad ingredients. Mix gently.
