Cucumber Quinoa Salad with Mint & Feta

Ingredients
  

  • 1 cup Quinoa dry
  • 1 cup Cucumber chopped
  • 1 cup Green Peas fresh or frozen, defrosted
  • 3/4 cup Feta crumbled
  • 6-8 Mint Leaves Large
  • 1/4 cup Olive Oil
  • 1/4 cup White Wine Vinegar
  • 1 Lemon juiced
  • Salt & Pepper To Taste

Instructions
 

  • Cook 1 cup dry quinoa according to the package directions and let cool slightly.
  • In a large mixing bowl, combine the cooked quinoa, green peas, cucumber, feta, and mint.
  • Whisk together the olive oil, white wine vinegar, lemon juice, and salt & pepper before pouring over the salad ingredients. Mix gently.
  • Serve and enjoy!
