- 2 cups shredded coconut, sweetened or unsweetened
- 2 tbsp honey
- 3 tbsp almond flour
- 1/4 cup full fat coconut milk (thick part only)
- 3/4 cup chocolate, dark or semi-sweet
- 1 tsp coconut oil
Line a small baking sheet with parchment paper.
In a food processor, blend together the shredded coconut, honey, almond flour, and coconut milk until well combined. This will take a few minutes. The dough will be wet and sticky.
Scoop into 1 tbsp size portions and form into balls and place on the parchment lined baking sheet. Place in the freezer for 30 minutes to allow the balls to set.
In a medium mixing bowl, melt together the chocolate chips and coconut oil in the microwave, stirring every 30 seconds. (This step can be done in a pot on the stove top over low heat, stirring constantly.)
Dip each ball into the melted chocolate and roll until completely covered.
Place each chocolate-dipped ball back on the baking sheet and refrigerate for an additional 30 minutes, or until the chocolate is set.
Enjoy these straight out of the fridge.
