It’s sweater weather and I am here for it. A full day outside playing, raking leaves, walking the dog. Then getting inside and making this delicious minestrone soup. That’s the perfect day right there!
What is minestrone?
Minestrone is traditionally an Italian soup made with vegetables, with pasta or rice often added. Because so many vegetables and grains can be added, there are many variations out there. It makes for an easy soup no matter the ingredients you have stocked at home.

This soup is definitely an easy weeknight meal that can be served steaming hot or even enjoyed cold. Although with autumn in the air, I can safely say I will be enjoying mine piping hot!

One Pot Vegetarian Minestrone
Quick and easy with minimal ingredients that you’ll be sure to have one hand. This one-pot vegetarian minestrone is wholesome and will surely be a family favourite all year round!
One Pot Vegetarian Minestrone Soup
Ingredients
- 2 tbsp olive oil
- 1/4 tsp dried fennel
- 1/2 white onion, diced or one whole small onion
- 2 cloves garlic
- 1/2 tsp black ground pepper
- 3 medium yellow potatoes, diced
- 1 can diced tomatoes 28 oz
- 1 can white kidney beans, drained and rinsed
- 900 ml vegetable broth
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 cup pearl barley
- 1/2 tsp red pepper flakes
- 1 tsp dried parsley or 1/4 cup chopped fresh parsley
Instructions
- Saute the dried fennel and onion on medium heat until transparent.
- Add the garlic and potatoes and saute until the garlic is fragrant.
- Add the remaining ingredients and bring to a boil. Reduce the heat and simmer for 30 minutes.
- Serve and enjoy with bread or biscuits!
