Easy Matcha and Coconut Energy Bites are made silky smooth with the use of a food processor. A fine consistency makes for the perfect bite-size treat with an unbeatable taste!
Let me start by saying that matcha has an earthy flavour. If you have yet to try matcha green tea powder, this just might be the perfect recipe to try it out! The balance of sweet honey and shredded coconut, paired with the umami flavour of the matcha powder, may help ease you into the taste of matcha. The caffeine in matcha has a different effect than the caffeine from coffee. It gives an energizing feeling that can help with focus versus the caffeine rush one gets from coffee.
Matcha green tea powder contains caffeine, making these Matcha and Coconut Energy Bites perfect for a midday boost of energy or a morning snack to get you going.
Matcha Powder versus Matcha Green Tea Bags
There is matcha powder and matcha green tea – matcha powder is what you are looking to buy for this recipe. Matcha can also come in the form of tea bags, but this is mixed with green tea and is not pure matcha powder. Matcha powder provides a greater caffeine kick since matcha powder is tea leaves ground into a very fine powder, and that is what you are consuming. Whereas green tea leaves are steeped in water and then taken out – the tea leaves are not consumed.
Matcha powder can be found in some grocery stores, online, or at your local bulk food store. Buying from a bulk food store may be a great option if you are just wanting to try it out for the first time. Or if you know you are only going to use a small amount at a time. Matcha powder does have an expiration date so it’s best to use it up soon after purchase for optimal flavor.

Ingredients used to make Matcha and Coconut Energy Bites
Oat Flour – Make sure to grind the large flake oats into a fine powder to give the energy bites a smooth texture.
Matcha Powder – The more vibrantly green the matcha powder is, the higher quality it is.
Vanilla Extract – Use pure vanilla extract for a stronger vanilla flavor. Substitutions can be made by using almond extract, though this will alter the overall taste.
Smooth Cashew Butter – Make sure it is oh-so-smooth for optimal texture. Smooth almond butter or a nut-free seed butter can be used as a substitution here. Remember that this will change the overall taste.
Shredded Coconut – Sweetened or unsweetened coconut can be used, it just depends on the overall sweetness that you would like!
Honey – Depending on the consistency of the honey used, feel free to melt it to a more runny consistency. This will help when it comes to mixing and making sure the honey is spread evenly throughout the energy bites.
How to make Matcha and Coconut Energy Bites
Measure and blend the oats in a food processor or blender until the oats become a very fine powder. This is one determining factor in the overall texture of the energy bites.
In a stand mixer combine the matcha powder, vanilla extract, cashew butter, and honey. A stand mixer is preferred to get the dough evenly mixed with the ingredients evenly distributed. Use a mixing bowl if a stand mixer is not an option. Make sure to fully combine until a smooth batter or dough is formed.
Add in the shredded coconut and mix well until fully combined.
Mix the dough to the desired consistency and then form into 16 balls. Scoop and roll the dough between your hands to make a smooth, round ball.
