Fresh and in season, asparagus is a spring favorite! You shouldn’t have any problem finding green asparagus in the grocery stores this time of year. Pick up a bunch and you’re ready for this recipe! Serve it as a side next to fish or your choice of protein.
Easy and Minimal Ingredients
Creating the perfectly roasted asparagus takes minimal ingredients. Asparagus (that’s a given), olive oil (likely in your pantry), salt, black pepper and garlic salt (also likely something that you have on hand), lemon (buy a big bag of lemons because you’ll need them for our LOW-SUGAR LEMON ICED TEA.)
How to Make Oven Roasted Lemon Asparagus
Preheat – Preheat the oven to 425 degrees Fahrenheit.
Prepare the asparagus – Wash the asparagus and trim the ends. This is a tricky technique to describe because it’s all about feeling out where the stem wants to break. Hold the asparagus with two hands somewhat near the bottom (not the tapered head) as if you are about to break the asparagus in half. When starting to bend the asparagus, it should naturally have a weak point where it wants to break. The bottom is more brittle and won’t taste as flavorful as the top above the breaking point. Break off the bottom and discard. Ideally this would only be a smaller portion of the asparagus that would be discarded. Do each piece of asparagus separately as they will each break at slightly different points.
Roast – Lay the prepared asparagus out in a single layer on a baking sheet. Drizzle with olive oil, salt, pepper, and garlic salt. Gently mix until the asparagus is evenly coated. Make sure the coated asparagus is in a single layer on the baking sheet to ensure even roasting.
Roast the asparagus in a 425 degrees Fahrenheit preheated oven for 12-15 minutes or to desired tenderness.
Drizzle – Drizzle the roasted asparagus with fresh squeezed lemon juice.

How do you store leftover roasted asparagus?
Store any leftover asparagus in an airtight container for up to three days. Reheating this is a little tricky as it will lose some of the crispiness from the oven roasting process. Reheat in the oven or microwave. Leftover roasted asparagus can also be enjoyed cold mixed in with your favorite salad.
