Here’s What You’ll Need
Quinoa: This ancient grain is a nutritional powerhouse, providing complete protein and all nine essential amino acids.
Cucumbers: Cool and refreshing, cucumbers add a delightful crunch to the salad.
Green Peas: Green peas are a good source of many vitamins & nutrients, and fiber, which is important for digestive health. Fiber can help keep you feeling full and satisfied, and may also help to regulate blood sugar levels.
Mint: This fragrant herb brings a burst of freshness and complements the other flavors beautifully.
Feta Cheese: Crumbled feta adds a salty richness and creaminess to the salad. We love to use Goat Milk Feta Cheese Crumbles, but you can do whatever type of feta you like best!
Extra Virgin Olive Oil: For healthy fats and a flavourful base to the dressing.
White Wine Vinegar: To add acidity and tanginess to the dressing.
Lemon Juice: Fresh lemon juice adds a touch of acidity and brightness. Bottled lemon juice works just fine too!
Salt & Pepper: To taste.
How to Make Cucumber Quinoa Salad with Feta & Mint
The first and hardest part of this recipe is cooking the quinoa. Follow the cooking directions on your quinoa package for the best results. While the quinoa is cooking, prep and chop your remaining ingredients. Allow your quinoa to cool slightly after cooking before mixing it in a large bowl with the cucumbers, peas, feta, and mint.
Sauce It Up!
Next, whisk together the sauce ingredients in a measuring cup or bowl. Pour the dressing over the salad and toss everything together until well-coated. Season with additional salt and pepper to taste.

Cucumber Quinoa Salad with Mint & Feta
Ingredients
- 1 cup Quinoa dry
- 1 cup Cucumber chopped
- 1 cup Green Peas fresh or frozen, defrosted
- 3/4 cup Feta crumbled
- 6-8 Mint Leaves Large
- 1/4 cup Olive Oil
- 1/4 cup White Wine Vinegar
- 1 Lemon juiced
- Salt & Pepper To Taste
Instructions
- Cook 1 cup dry quinoa according to the package directions and let cool slightly.
- In a large mixing bowl, combine the cooked quinoa, green peas, cucumber, feta, and mint.
- Whisk together the olive oil, white wine vinegar, lemon juice, and salt & pepper before pouring over the salad ingredients. Mix gently.
