Coconut milk in baking adds a subtle nutty flavor with a touch of added sweetness. Coconut milk is a great option for dairy-free diets. A nice substitute for dairy milk or plant based milk is coconut milk. Use coconut milk as a substitution at a one-to-one substitution. Coconut milk contains vitamin B12, vitamin D and calcium, which support brain and bone health. For this Chocolate Coconut Bliss Balls Recipe, it calls to use the thickened part of the can. Chocolate – Dark Chocolate or Semi-Sweet 

Dark chocolate and semi-sweet chocolate are similar in that they both fall under the dark chocolate category. Dark chocolate encompasses a range of chocolate percentages. Semi- sweet is within the percentage range of 35%-65%, thus making is a sweeter choice than a higher percentage 65%-80%, which is referred to as bittersweet dark chocolate. For this recipe, any dark chocolate ranging from 35% to 80% will be delicious and compliment the other flavors and overall sweetness of the Chocolate Coconut Bliss Balls. Consider using a higher percentage of chocolate if you used sweetened shredded coconut. Similarly, consider using semi-sweet chocolate if you will be using unsweetened shredded coconut.

How to Make Chocolate Coconut Bliss Balls

Plan Ahead 

Making these chocolate coconut bliss balls is really easy, though it does take some time to wait for the bliss balls to set in the freezer. It will take about half an hour of freeze time for the coconut balls to set, and then again about another half an hour for the chocolate to set at the end. Prepare a small baking sheet lined with parchment paper for each step of freezer/fridge time.

Blend the ingredients 

In a food processor, blend together the shredded coconut, honey, almond flour, and coconut milk until these ingredients are well combined. This will take a few minutes and the batter will be wet and sticky. 

Form the Coconut Bliss Balls

Scoop the batter into 1 tbsp size portions and form into balls. Place the formed coconut bliss balls onto the parchment lined baking sheet. Place this in the freezer for 30 minutes to allow the coconut balls to set.

Melt the Chocolate

In a microwave-safe mixing bowl, melt together the chocolate chips and coconut oil in the microwave, stirring every 30 seconds. Alternatively, this step can be done in a pot on the stovetop over low heat, stirring continuously. 

Dip the Bliss Balls into the Chocolate

Once the chocolate mixture is fully melted, remove the coconut balls from the freezer and dip each ball into the melted chocolate. Then, using a spoon, roll the ball until it is completely covered in chocolate. Allow any excess chocolate to drip off the coconut ball before placing each chocolate-dipped ball back onto the parchment-lined baking sheet and refrigerate for half an hour, or until the chocolate is set.

Serve straight from the fridge. Store these in the fridge to keep best, especially if your house runs on the warmer side.

Ingredients
  

  • 2 cups shredded coconut, sweetened or unsweetened
  • 2 tbsp honey
  • 3 tbsp almond flour
  • 1/4 cup full fat coconut milk (thick part only)
  • 3/4 cup chocolate, dark or semi-sweet
  • 1 tsp coconut oil

Instructions
 

  • Line a small baking sheet with parchment paper.
  • In a food processor, blend together the shredded coconut, honey, almond flour, and coconut milk until well combined. This will take a few minutes. The dough will be wet and sticky.
  • Scoop into 1 tbsp size portions and form into balls and place on the parchment lined baking sheet. Place in the freezer for 30 minutes to allow the balls to set.
  • In a medium mixing bowl, melt together the chocolate chips and coconut oil in the microwave, stirring every 30 seconds. (This step can be done in a pot on the stove top over low heat, stirring constantly.)
  • Dip each ball into the melted chocolate and roll until completely covered.
  • Place each chocolate-dipped ball back on the baking sheet and refrigerate for an additional 30 minutes, or until the chocolate is set.
  • Enjoy these straight out of the fridge.
