How to make Broccoli and Cheese Bites

A food processor is a key tool in making this recipe so easy. Roughly chop or break apart two medium heads of broccoli and put in the food processor. Throw in those stems too! Depending on your food processor, this may need to happen in a couple batches for all the broccoli to get finely chopped up.

Put the finely chopped broccoli into a mixing bowl and add in the flour, dried parsley, dried oregano, dried basil, and garlic powder. The great part about these Broccoli and Cheese Bites are the adaptability in what seasonings you throw in! If you are looking to switch up the herbs and spices, do it in this step.

Add in the wet ingredients – eggs, shredded cheese, olive oil, and tahini.

Stir well! Then form into rounds and place on a parchment paper lined sheet pan. The bites can be pretty close together as they will not expand.

Bake the Broccoli and Cheese Bites in a preheated oven at 425 degrees Fahrenheit for 15 minutes, flip each Broccoli and Cheese Bite and return to the oven for another 5 minutes.

Serve hot with Lemon Tahini Dipping sauce or EGGLESS DILL DIP MAYONNAISE.

Broccoli and Cheese Bites

Broccoli and Cheese Bites are packed with flavor, antioxidants, fibre, and gooey cheesy goodness. Adding in the protein from the eggs and you have a nice little energy boost in one little bite!

Ingredients
  

  • 2 medium heads broccoli
  • 1/2 cup white flour
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp garlic powder
  • 2 eggs
  • 1/3 cup shredded mozzarella cheese
  • 1/2 tsp olive oil
  • 1 tbsp tahini

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Roughly chop broccoli and add to food processor and pulse until broccoli is finely shopped. Without a food processor, finely chop broccoli with a knife.
  • Add finely chopped broccoli to a mixing bowl.
  • Add dry ingredients to the mixing bowl – flour, dried parsley, dried oregano, dried basil, and garlic powder.
  • Add the wet ingredients to mixing bowl – eggs, shredded cheese, olive oil, and tahini.
  • Mix well to combine all ingredients.
  • Mould mixture into 24 rounds and flatted onto parchment paper lined sheet pan. These may be a bit crumbly when forming into rounds but will stick together during baking.
  • Bake at 425 degrees Fahrenheit for 15 minutes. Remove pan from oven and flip each bite, put back in oven and bake for another 5 minutes.
  • Serve hot or cold!
