Simple Slow Cooker Chicken Soup

Prep time: 10 minutes

Cook time: 5 hours 

Serves: 6 

Ingredients:

  • 6 chicken breasts
  • 1 cans white kidney beans
  • 1 can black eyed peas 
  • 8 cups chicken broth
  • 1 cup chopped yellow onion
  • 3 cloves garlic, chopped
  • 1 tsp salt
  • 3 tsp oregano
  • 1 ½ tsp thyme
  • 1 ½ tbsp cumin

Toppings:

  • Lemon juice to taste 
  • Dill

Instructions:

1. Place chicken breast in the bottom of the slow cooker. 

2. Add remaining ingredients to the slow cooker. 

3. Cook on high for 5 hours or on low for 7. 

4. When the soup is done, shred the chicken with a fork. 

5. Add lemon juice and salt and pepper to taste. 

6. Serve hot.
