Makes: 6-9 thick pancakes
- 2 eggs
- ¾ cup whole milk (plus more for desired consistency)
- 1 tsp vanilla extract
- 1 ½ cups flour
- 2 tsp baking powder
- ¼ tsp salt
Instructions:
- Add eggs, milk and vanilla to a mixing bowl and whisk to combine.
- Add remaining ingredients. Stir to combine. (Add more milk if the batter needs to be thinned out. Thicker pancakes will take longer to bake. )
- Ladle the batter into a preheated cast iron skillet over medium heat, to make 6 inch round pancakes.
- Flip pancakes once bubbles start to form and when the pancakes are golden on the bottom.
- Remove pancakes from the pan once they are golden brown on each side.
