These sweet, gooey, goodies are a perfect snack to feed a craving and give that energy boost you might be looking for.
Super simple energy bites can be formed into 24 mini bite-size bites or form them a little larger if you like! These can be stored in an airtight container on the counter, to keep the texture soft, for up to 3 days. If you’d like them to stay fresh for longer, store the energy bites in an airtight container in the fridge for up to 6 days. But, take into account that these are so delicious that they likely won’t last long!
Let’s talk No Bake Energy Bite Customizations!
These little energy bites are fully customizable! Swap out ingredients or add different ingredients. Chia seeds are an excellent add-in. Omit the chocolate or leave the chocolate chips whole! Swap the maple syrup for honey. If the mixture is too crumbly, add more syrup or peanut butter, if it’s too runny, add more oats. Swap the chocolate chips for chunks or chocolate curls for a lighter chocolate flavor. Make it gluten free by using gluten free oats. Make it peanut-free by substituting the peanut butter with sunflower or another seed butter. If you don’t have a food processor, don’t worry! Leave the oats whole for a more rustic energy bite.
Peanut Butter, it’s not all the same
Peanut butter comes in so many variations! The peanut butter I use to make these bites is natural and freshly ground, which comes fully mixed and does not have any oils separated. Now, your peanut butter does not have to be the same, but it may affect the consistency and moldability of your bites. If your peanut butter does have oil separated, just make sure to mix it well before adding it to your bowl.

Food Processor – to Grind Oats into Oat Flour
Adding the large flake oats to the food processor is sort of an optional step. A flour-like consistency makes the bites easier to form and will stay together better. That said, I also like to make sure that its a little bit chunky, and by that I mean leave some of the large flake oats still slightly intact, and not fully ground into a powder.
Chop the Chocolate Chips
Pour the ground oats into a mixing bowl. Then add the chocolate chips to the food processor. Pulse a few times to break the chocolate chips into smaller pieces. Alternatively, you could use a knife to roughly chop.

Add the chopped chocolate chips to the bowl with the oats. Add the remaining ingredients directly to the bowl- peanut butter, shredded coconut, and maple syrup. Lastly, add the maple syrup. If you are choosing to use honey instead of maple syrup, make sure it is a runny consistency so that it will easily mix with the rest of the ingredients. Next, mix all of the ingredients in the bowl with a spatula until fully combined.
Form Energy Bites into Rounds
Form the mixture into 24 mini bite-size balls by rolling small amounts between your hands to round out each bite!

No Bake Mini Energy Bites with Peanut Butter
Equipment
- Food Processor (optional)
Ingredients
- 1 cup rolled oats
- 1/4 cup unsweetened dark chocolate (or chocolate chips of choice)
- 2/3 cup natural smooth peanut butter
- 1/2 cup unsweetened coconut flakes
- 2 tbsp pure maple syrup
- 2 tbsp hemp hearts
- 1 tsp vanilla extract
Instructions
- Pulse the oats in a food processor to grind into a semi-fine flour.
- Chop up the unsweetened dark chocolate into small pieces.
- Add the oat flour and chocolate pieces to a mixing bowl.
- Add all of the remaining ingredients to the mixing bowl and combine well with a spatula.
- Using your hands, form into 24 half-inch round bites.
