This stay-with-you-all-day breakfast can be prepared so fast! I was looking for a quick and healthy meal that could feed a few all at once. Okay, realistically I was looking for an easy and filling breakfast that would keep my toddler’s tummy full for a while and be eaten as leftovers for a few days (It lasted all of one day, but that’s beside the point!) This breakfast is healthy, naturally sweetened, and is super easy to whip up!
These Blueberry Baked Oatmeal Cups may seem old fashioned, but it has so many possibilities if you are looking to jazz the dish up a bit. (Don’t tell anyone, but I have even enjoyed this as a dessert. Serve this hot or serve it cold, but with steamed milk on top. Oh, my, goodness. Add fresh berries, add cinnamon, add a drizzle of honey, add nuts – the options are seriously endless!

How to make Blueberry Baked Oatmeal Cups
To be totally transparent, because this recipe can be a quick prep recipe, I tend to just toss all of the ingredients into one big bowl and mix well. However, on days where I do have a few extra minutes to dedicate to this, I make it the proper way, and that I will share with you.
Start by combining the oatmeal, baking powder, and salt and mixing them in a large bowl. In a separate bowl add the milk, vanilla, eggs, melted butter, and honey. Depending on the type of honey, you may need to melt this as well in order to get it to a runny consistency. Mix the wet ingredients well.
Pour the wet ingredient mixture into the dry ingredient bowl and stir well.
Fold in the frozen blueberries.
Using a small ladle or spoon, divide the mixture evenly into a muffin tin. Take care in making sure the batter is divided evenly based on consistency as well – there may be some juice from the blueberries starting to form if they have been sitting out during the preparation – so each muffin should have an equal batter to liquid ratio!
Bake in a preheated oven at 375 degrees Fahrenheit for 30 minutes.
I’d recommend to let these cool completely in the muffin tin as this will help come time to remove them from the muffin tin. Alternatively, you can use muffin liners for an easy clean up.
Serve hot with cream or milk poured over each individual serving. Add fresh berries or drizzle maple syrup on top.

Ingredients
- 2 1/2 cups large flake oats
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/3 cup milk
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 eggs
- 6 tbsp melted butter
- 1 cup frozen blueberries

Instructions
- In a large bowl combine dry ingredients – large flake oats, baking powder, salt.
- Melt butter and melt honey (if needed to get to a runny consistency).
- In a separate bowl combine all wet ingredients – milk, vanilla extract, eggs, honey, melted butter.
- Add wet mixture to dry mixture and stir to combine.
- Fold the frozen blueberries into mixture.
- Scoop mixture into 12 cup muffin pan.
- Bake uncovered at 375 degrees Fahrenheit for 30 minutes.
