Simple Rustic Pancakes 

Prep: 5 minutes 

Makes: 6-9 thick pancakes 

  • 2 eggs
  • ¾ cup whole milk (plus more for desired consistency)
  • 1 tsp vanilla extract
  • 1 ½ cups flour
  • 2 tsp baking powder
  • ¼ tsp salt

Instructions:

  1. Add eggs, milk and vanilla  to a mixing bowl and whisk to combine. 
  2. Add remaining ingredients. Stir to combine. (Add more milk if the batter needs to be thinned out. Thicker pancakes will take longer to bake. )
  3. Ladle the batter into a preheated cast iron skillet over medium heat, to make 6 inch round pancakes.
  4. Flip pancakes once bubbles start to form and when the pancakes are golden on the bottom. 
  5. Remove pancakes from the pan once they are golden brown on each side.
