Chocolate Covered Peanut Butter Balls

Ingredients:

Peanut Butter Filling:

  • 1 cup peanut butter
  • ¼ cup butter, softened 
  • ¼ cup maple syrup
  • 1 cup rice krispies 
  • 1 tsp vanilla extract 
  • A pinch of salt

Chocolate Coating:

  • 5 oz chocolate chips
  • 1 tsp coconut oil or butter
  • Flaky sea salt for topping

Instructions: 

  1. Fully combine peanut butter and softened butter.
  2. Add in remaining filling ingredients and combine.
  3. Firm mixture in the freezer for 15 minutes (in bowl) 
  4. Line baking sheet with parchment paper
  5. Once mixture has firmed up, scoop and form into balls. Place balls on parchment paper.
  6. Place the baking sheet in the freezer for 30 minutes.
  7. Make the chocolate coating by melting the chocolate and coconut oil together. 
  8. Coat peanut butter balls in chocolate coating, then sprinkle with flaky sea salt. 
  9. Place baking sheet back in freezer until they set. 
  10. Serve straight from freezer or fridge (these might get melty being stored at room temp.)
